Bolognese Topped Portobello Mushrooms 🍄🟫
Ingredients
- 500g beef mince
- 1 onion, finely chopped
- 4 garlic cloves, minced
- 2 stalks celery, roughly chopped
- 1 carrot, roughly chopped
- 1/2 long red chilli, sliced finely (optional)
- 1 cup beef broth or water
- 1 tablespoon tamari (naturally fermented soy sauce)
- 2 teaspoons dried basil
- 1 teaspoon paprika powder
- 700mls tomato puree
- 2 tablespoons extra virgin coconut oil
- Pinch unrefined salt & freshly ground black pepper
- 4–5 large portobello mushrooms
- To serve: parmesan cheese, grated
- To serve: fresh flat leaf parsley, roughly chopped
Method
- Melt coconut oil in a large pan over medium heat, cook onion, carrot, celery and chilli for 4 minutes then add garlic and cook for a further 1 minute.
- Add beef mince, basil, paprika and tamari to pan and cook for around 5–10 minutes until browned (stir as you cook).
- Add tomato puree and broth (or water) to pan and bring to a boil. Once boiling reduce heat to a simmer until thickened.
- Place mushrooms in pan with sauce, fully coat tops of mushrooms with sauce and put lid on and cook for a further 5–10 minutes or until mushrooms are softened and cooked through. Serve with fresh parsley and grated parmesan cheese on top.
Orange Ginger Quarantini
Ingredients (Serves 2)
- 330ml lemon ginger kombucha
- 4 thin slices of freshly peeled cucumber
- Sprinkle of freshly grated ginger
- ½ orange, cut in quarters
- Zest of orange
- Ice
Method
- Divide the kombucha and ice evenly between two glasses.
- Add the freshly grated ginger, orange zest and cucumber slices.
- Squeeze, then drop in an orange quarter in each glass and mix. Done!
Eggplant Parmigiana 🍆
Ingredients
- 2 eggplants, each cut into 5 rounds widthways
- ¼ teaspoon unrefined salt
- 200g mozzarella cheese, sliced
- 1½ cups tomato passata
- ½ cup parmesan cheese, grated
- 1 bunch broccolini
- Extra virgin olive oil
Method
- Line a large baking tray with baking paper and preheat oven to 200°C.
- Drizzle a little olive oil over each eggplant round and season with a pinch of salt. Lay them out in a single layer on the baking tray and cook for around 15 minutes or until slightly golden brown.
- Take them out of the oven and stack them, working from largest to smallest three levels high, each with a dollop of tomato sauce, a sprinkle of parmesan cheese and a slice of mozzarella cheese in between. Finish with a dollop of sauce and sprinkle of parmesan cheese on top.
- Return them to the oven with the broccolini laying around the stacks on the baking dish and bake for around 20 minutes or until the cheese melts. Done!
Passionfruit Lime Sparkling Cocktail/Mocktail
Ingredients (Serves 1)
- 1 passionfruit
- ½ lime, juiced
- 1 cup sparkling water
- 30ml vodka or gin (optional)
Method
- Place a mesh strainer over a bowl. Cut the passionfruit in half and scrape out the seeds and pulp into the strainer.
- Press down on the pulp and seeds to extract all the juice.
- Add the lime juice and sparkling water (and gin or vodka if you’re making this as an alcoholic cocktail). Stir to combine and pour into a cocktail glass. Done!
Meatza 🍕
Ingredients (Pizza Base)
- 500g chicken mince
- 1 egg
- 2 tsp dried oregano
- Pinch of unrefined sea salt
- Crack of black pepper
- 1 tsp onion powder
- 1 tsp garlic powder
Topping Ideas
- Margherita — Mozzarella cheese, tomato passata, 4 fresh tomatoes, cracked black pepper, pinch unrefined salt and 12 basil leaves.
- Tropical — Mozzarella cheese, tomato passata, fresh flat leaf parsley, fresh pineapple, good quality ham or bacon, cracked black pepper and pinch unrefined salt.
- Puttanesca — Mozzarella cheese, tomato passata, fresh flat leaf parsley, 12 olives, 1 garlic clove crushed, 10 anchovies, cracked black pepper, pinch unrefined salt and extra virgin olive oil for drizzling.
- Carbonara — Mozzarella cheese, fresh flat leaf parsley, 1 garlic clove crushed, good quality bacon, 3 eggs, cracked black pepper, pinch unrefined salt and grated parmesan cheese.
- Rob’s — Mozzarella cheese, tomato passata, olives, spinach leaves, pumpkin, mushrooms, bacon and fresh tomato.
Method
- Add all base ingredients to a bowl and mix together.
- Flatten mixture onto a tray in the shape of a pizza.
- Cook pizza in an oven set at 200 degrees for 8 minutes.
- Take pizza out, drain liquid and add your favourite pizza toppings and return to oven and cook until toppings are cooked.
Strawberry Lemon Mocktail
Ingredients (Serves 2)
- 1.5 cups strawberries (fresh or frozen), green bits chopped off
- 1 cup sparkling water
- 1 cup plain kombucha
- ½ lemon, juiced
- 1 cup ice cubes
Method
- In a blender, blitz 1 cup of strawberries with the lemon juice until fully combined. If necessary, incorporate a dash of water to facilitate the blending process.
- Place the ice cubes into two separate glasses and pour in the contents from the blender and then evenly pour in the kombucha and sparkling water.
- Slice the remaining strawberries and place on top of each glass to serve. Done!
